  • 8 - 4-6 oz (125-175 g)
    turkey scallopini
  • 4
    eggs, beaten
  • 1/2 cup (125 mL)
    finely grated parmesan cheese
  • to taste
    salt and pepper
  • 1/2 cup (125 mL)
    all purpose flour
  • 2 Tbsp (25 mL)
    canola oil
  • 1/4 cup (50 mL)
    chopped onion
  • 1
    clove garlic, minced
  • 1/4 cup (50 mL)
    turkey or chicken stock
  • 1 - 540 mL (19 oz)
    can, tomatoes
  • 2 tsp (10 mL)
    dried oregano
  • 1 tsp (5 mL)
    dried basil
  • 1/2 tsp (2 mL)
    tabasco sauce
  • 2 tsp (10 mL)
    granulated sugar
  • grated parmesan cheese


Beat eggs with parmesan, salt and pepper. Dredge scallopini in flour then dip in egg mixture. In a fry pan, heat 1 Tbsp (15 mL) oil at medium-high. Cook scallopini 1 to 2 minutes on each side until pink color is gone. In another fry pan, saute onion with garlic in remaining oil over high heat, 2 minutes. Add turkey stock and the remaining ingredients. Simmer 5 minutes, low heat. Add to food processor, reduce sauce until smooth consistency. Place scallopini on plate. Top each with 1/4 cup (50 mL) sauce. Serve with grated parmesan cheese.
